Kukicha, also known as "twig tea", is made from the stems of young tea leaves as they are separated during the refining process of sencha. It has a mildy sweet flavor, with subtle umami notes with a deep floral aroma. Since kukicha is made up of primarily stems, it tends to have a higher concentration of L-theanine and lower caffeine compared to leaf-only green teas.
